Lime Yogurt Pie Recipe is made with key lime yogurt and cream cheese, poured into a Honey Graham Cracker Crust and topped with thawed whipped cream.
Quick and easy to make, this recipe produces a scrumptious, tart tasting and creamy pie.
Yogurt, especially Greek Yogurt, contains many health benefits making it a healthy choice with delightful taste.
Some yogurts on the market are labeled Lime and some are labeled Key Lime. Either one produces the same great results.
Beat cream cheese in a mixing bowl on medium speed.
Turn mixer to low speed, add powdered sugar a little at a time, beating well after each addition. This prevents the sugar from flying all over the place.
Add yogurt and food coloring. Turn mixer speed back to medium and beat until the lumps are gone.
Do not turn the mixer to high speed because it will beat too much air into the mixture.
Pour into the cooled Graham Cracker Crust. Smooth top with a spatula or knife.
Top with thawed whipped cream.
If desired, garnish with slices of fresh lime or the peel cut into thin strips.
May also be garnished with the lime zest (the grated outside green part of the rind) sprinkled on top.
Place pie in the refrigerator several hours or overnight before serving.
You may serve this immediately. However, it will be soft.
Pie may also be frozen. Serve slightly thawed, if desired.
Crush crumbs in a food processor. Mix together with the butter in a small mixing bowl. Press buttered crumbs into a 9" microwaveable pie plate. Microwave on high for 1 minute.
Let pie sit in the microwave for a few minutes to cool down, then remove carefully. Place on a wire rack to finish cooling.
