No Bake Oatmeal Cookie Recipe
This Old-Fashioned No Bake Oatmeal Cookie Recipe has been in our family a long time. They used to be called stove top cookies and didn't contain nuts. We added them and haven't made them any other way since.
NO BAKE COOKIE
2 cups sugar
1 stick butter
1/2 cup evaporated milk
1/3 cup cocoa
1 teaspoon vanilla flavoring
3 cups quick rolled oats (oatmeal)
1 cup creamy peanut butter
1/2 cup pecans, coarsely chopped
In a large saucepan add sugar, butter, milk, cocoa, and vanilla.
Bring to a boil on low heat and boil one minute. Start counting when you see the first bubble.
Turn off heat and quickly stir in peanut butter, oatmeal, and pecans, mixing thoroughly. Drop by tablespoonful onto cookie sheet lined with aluminum foil, ungreased. Cool.
Chill in refrigerator several hours or overnight to set up firmly before serving.
