Type One - Shortened Cakes
This type is as the name implies, cakes that contain shortening.
Shortening consists of natural fats like butter and lard and vegetable oils that are hydrogenated to make them solid at room temperature like margarine and Crisco.
Shortened cakes, except for some pound cakes, contain a chemical leavening agent like baking powder, cream of tartar and/or baking soda.
Shortened cakes also contain eggs that help them rise.
Flour and eggs make a shortened cake strong while sugar and fats make them weak.
Therefore, it is imperative to have a balanced recipe for the perfect, delicious cake.
Type Two - Foam Cakes
This includes Angel Food Cakes and Sponge Cakes.
True angel food and sponge cakes are leavened with only air.
This necessary air is provided by beating the egg whites and folding into the cake batter properly.
Although some sponge cakes do contain a small amount of baking powder.
Type Three - Chiffon Cakes
Chiffon Cakes recipes contain liquid fat rather than solid fats and an abundance of egg whites for air leavening.
Again, some recipes of this type cake also contain a small amount of baking powder, especially when less eggs whites are called for.
This new-on-the-scene type of cake has a different way of mixing.
It combines the making of an angel food cake with some of the steps for shortened cakes to make a unique type of cake that is delicious and versatile in use.
According to some historians this cake was invented by Harry Baker in the 1020s.
However it wasn't popular until the 1940, after he sold his formula to General mills and the recipe was aggressively promoted from the late 1940s to early 1960s.
