Place prepared pie crust in baking dish and set it in the refrigerator to chill.
In the meanwhile prepare the filling.
Place the eggs, honey, brown sugar, melted butter, flavoring and spices in a mixing bowl.
Mix well on medium speed.
Add the mashed sweet potatoes and mix on medium speed until thoroughly mixed.
Pour filling gently, into the pie fill and bake in a preheated oven 425F. for 15 minutes.
Reduce temperature to 375F. and bake 45-50 more minutes or until the crust is brown and pie test firm in center.
Remove from oven and cool on a rack until thoroughly cooled.
TIP: Sweet potatoes that are large and round are less stringy after cooking than small skinny potatoes, in my experience.
Prepare Homemade Whipped Cream adding the almond flavoring with the powdered sugar and vanilla extract.
Spread on pie.
Serve immediately or chill in the refrigerator a few hours before serving.

Mix together sugar, spices and salt.
Stir into potatoes in a mixing bowl. Mix together eggs and milk and stir into potato mixture.
Mix until smooth.
Place pie crust in pie pan. Slowly, pour in pie filling mixture. Bake in a preheated 450F. oven for 10 minutes.
Reduce heat to 350F. and bake another 35 minutes.
